Trout Roe Cream, Grandma Winkelmann's Recipe
250g trout roe400g smoked salmon trout2 cups sour cream2 small shallotsJuice of 1/2 lemon1 tbsp. level dillSaltPepper
Cut the smoked salmon trout into small cubes or strips. Finely chop the dill and also cut the shallots into very small cubes. Put the sour cream in a bowl, add the smoked salmon trout, the chopped dill and the chopped shallots. Season with lemon juice, salt and pepper. Finally, carefully fold in the trout roe.
The cream tastes best if it is left to infuse in the refrigerator overnight.
Rosemary Crust for Salmon Trout Fillet
1-2 tsp breadcrumbs1 egg1/2 onion1/2 tsp mustard1/2 tsp rosemaryseason with salt and pepper
Trout Paste
200g butter200g cream cheese250g smoked trout filletHorseradishLemon juiceSaltPepperDill or parsley and chives (to taste)
Chop the trout fillet in a food processor. Beat the cream cheese and butter until creamy. Fold in the trout fillet and spices to taste.
Oven-Baked Salmon Trout with Sauerkraut
1 salmon trout approx. 1.2kgFinely diced soup vegetablesSaltPepper
Salt the inside of the salmon trout, season the soup vegetables with salt and pepper, stuff the salmon trout with it, wrap in aluminum foil and cook in the oven at 200°C for approx. 40 minutes.
Sauerkraut
600 g sauerkraut1 onion1 apple2 tbsp oil2 tbsp tomato paste1 red bell pepperSugarBay leafJuniper berryApple juiceSaltPepper
Dice the onion and sauté in oil until translucent, add tomato paste and a little sugar and sauté, then add sauerkraut, apple juice, peeled, diced apple and spices. Cook for approx. 20-30 minutes, add the finely diced bell pepper 10 minutes before the end of the cooking time. Possible side dishes: potatoes and butter sauce.
